Hi, my name is Sean England. I am an English II STEM student and this is my Genius Hour project. I have decided that for my project I will cook different Mexican recipes that I find. I want to do this because I have Spanish right now and I want to do something that will help me learn more about the culture.

Recipes
Here are the recipes that I have made
Pico de Gallo
Ingredients:
- 1 cup finely chopped white onion
- 1 medium jalapeno pepper, ribs and seeds removed, finely chopped
- 1/4 cup lime juice
- 3/4 teaspoon salt, more to taste
- 1 1/2 pound ripe red tomato, chopped
- 1/2 cup finely chopped fresh cilantro
Instructions:
- In a medium bowl, combine the chopped onion, jalapeno, lime juice, and salt. Let it marinate for a few minutes while you chop the tomatoes and cilantro.
- Add the chopped tomatoes and cilantro to the bowl and stir to combine. Taste, and add more salt if needed.
- Let the mixture marinate for 15 minutes or longer in the refrigerator. Serve as a dip with tortilla chips. Pico de Gallo keeps well in the refrigerator, covered, for up to 4 days.
Tacos
Ingredients: (For 2)

- 1 lb Ground Beef
- Flour Tortillas
- 1 Head Lettuce
- 1 pack of Taco Seasoning Mix
- 1 8 oz pack of Pepper Jack Cheese
- 1 Roma Tomato
Instructions:
- Brown Ground Beef is skillet over medium heat. Drain excess grease if needed
- Stir in the Taco Seasoning Mix
- Dice Tomato
- Use a Cheese Grater to grate the Cheese (As much as needed)
- Shred the Lettuce
- Put Tortilla on a plate and layer the ingredients in the middle.
Instant Pot Burrito Bowl

- 2 cups long grain white rice
- 2 cups water
- salt to taste
- 2-3 tablespoons chopped cilantro
- 1 tablespoon olive oil
- 1 cup diced onion
- 3-4 cloves garlic, minced
- 2 jalapenos
- 2 diced bell peppers
- 1 cup corn
- 1 14.5 ounce can black beans, drained
- 1 1/2 cup salsa
- 3 tablespoons taco seasoning
- shredded cheese (optional)
Instructions:
- Heat the oil in the bottom of the instant pot, using the saute setting. Add in the garlic and jalapenos and give it a stir. Add in the chopped onions. Saute for 3-5 minutes.
- Add in the bell peppers, black beans, rice, salsa, salt, and taco seasoning. Stir to mix.
- Add in the water, seal the lid, and make sure the switch at the top is set to sealing. Press manual button and set to 5 minutes.
- When done, let the pressure out.
- Remove the lid, be careful to avoid any steam coming from the pot. Stir in the corn, and add any additional toppings.
Cinnamon Tortilla Chips

- 4 tbsp Cinnamon Brown Sugar Butter
- 5 flour Tortillas
Instructions:
- Melt Butter in a microwave safe bowl
- Use a brush to add melted Butter to one side of each Tortilla
- Use pizza cutter to cut Tortillas into wedges
- Bake at 350 degrees fo 10 minutes until Tortillas are crispy
Black Beans
Ingredients:

- 1 lb of dry back beans
- 2 Bay leaves
- 2 cloves of garlic, crushed
- 4 cups of water
- Pour black beans into the pressure cooker
- Add water to the pressure cooker
- Add bay leafs to the pressure cooker
- Crush garlic and add to pressure cooker
- Add cover and set valve to sealing
- Pressure cook for 22 minutes
- When finished, release pressure and remove Bay Leaves and Garlic prior to eating
Nachos

- 1 lb Ground Beef
- 1 pack of Taco Seasoning Mix
- 4 oz of sharp Cheddar Cheese
- 1 Jalapeno
- Roman Tomato
- White Corn Tortilla chips
- Cilantro
- Cut Jalapeno into slices
- Dice Tomato
- Grate the cheese
- Brown the Ground Beef and drain excess fat
- Stir in Taco Seasoning
- Add Tortilla chips to the baking sheet and put a layer of cheese on top
- Bake at 350 until cheese is melted
- Add Ground Beef, Jalapeno, Tomato and other desired toppings
Quesadillas
Ingredients:
- Large flour tortillas
- 4 oz. of sharp cheddar cheese, grated
- 1 can of drained black beans
- 1 green bell pepper
- 1 lb of ground beef
- Chop bell pepper into chunks
- Grate the cheese
- Brown ground beef in skillet, season with salt and pepper
- Drain excess fat
- Heat skillet under medium-low heat
- Add 1 tortilla to the skillet
- Add toppings to half of the tortilla and fold it
- Heat for 3 minutes or until cheese is melted
- Use a spatula to flip the tortilla and heat for an additional 3 minutes
- Remove quesadilla from skillet and use a pizza cutter to cut if necessary
